Name one thing you understood late. A mother's birthday card gets its power from hindsight — realising what a decision cost her, or that she went without something so you did not. Parents rarely hear the acknowledgement, and it is the sentence they repeat to other people.
Then remove a task. Indian mothers cook on their own birthday unless actively prevented. Writing today you are not cooking, and meaning it, is a more affecting gift than any adjective, and it is the part she will tell her sister about.
